Bramley Apple Tray Bake

Light golden sponge cake, filled with sharp bramley apples. The perfect combination of sweet and sour, and easy to create.
Ingredients
- 450g Bramley apples, cored and thinly sliced
- 225g butter (plus extra for greasing)
- 250g golden caster sugar (plus extra for sprinkling)
- 4 eggs 2 tsp of cinnamon
- 2 tsp Dr Oetker vanilla extract
- 350g Co-operative self raising flour
- 2 tsp baking powder
Method
- Pre heat the oven to 180C/160C fan/gas 4. Butter and line a rectangular baking tin, (30cm by 20cm if possible).
- In a large mixing bowl, whisk the butter, sugar, eggs, vanilla extract, flour and baking powder until the mix is smooth.
- Spread half of the mixture into the tin, and lay half the apple slices on top. Repeat the layering process for the last of the ingredients, ensuring a layer of cake mix is on top. Sprinkle the whole thing with sugar and the cinnamon.
- Bake in the oven for 50 minutes, until the cake is golden and springy.
- Allow to cool, and cut into squares.
