Her home-made starter dough, affectionately known as 'Arturo' ('Arthur'), has been used to make bread and pizzas at her family home in Puglia since the 1940s. Now, a little Arturo is used in our dough, made with premium 00 grade flour then slowly fermented for 24 hours and baked by open flames in a real wood-fired oven.

Cooking Guidelines
