Mango and Passion Fruit Fool

Tropical fruit, of the Drupe family. It is a fleshy fruit which grows around a long flat seed. Skin has orange and red tones, with bright orange flesh. Sweet tasting fruit when ripe.
Ingredients
- 2 large mangoes
- 4 passion fruits, in half
- 300g Greek yoghurt
- juice 1 lime
- mint leaves (for garnish)
Method
- Peel the mangoes using a vegetable peeler and cut the cheeks into cubes. Put aside until needed.
- Take the rest of the flesh from the mango, and liquidise to a puree. Use the seeds from 2 passion fruit and mix in with the puree. Add the lime juice, according to how sour you like it.
- Fold the yoghurt and roughly half the mango cubes through the mix.
- Divide the mixture between 4 glasses, and top each fool with cubes of mango and seeds from the remaining passion fruits.
- Decorate each fool with the mint leaves.
