Mexican Style Fajitas

Ingredients
- 3tbsp tomato ketchup
- 1tbsp balsamic vinegar
- ½tbsp brown sugar
- 2tsp dried oregano
- 1tsp Tabasco sauce
- spray olive oil
- 1 red onion, cut into wedges
- 1 red pepper, cut into strips
- 1 yellow pepper, cut into strips
- 400g lean beef stir fry strips
- 4 wholemeal flour tortillas
- 6tbsp fat-free plain yogurt
- 1 lime, cut into wedges
- handful of fresh coriander (optional)
Method
- Preheat the oven to 150˚C/Gas 2. Mix together the tomato ketchup, balsamic vinegar, brown sugar, oregano and Tabasco sauce.
- Lightly spray the bottom of a large pan with oil and fry the onion and peppers over a high heat until they start to colour and soften. Add the beef and continue to cook for at least 1 min, or until cooked, before stirring in the sauce. Tip into a serving bowl.
- Meanwhile, wrap the tortillas in foil and put in the oven to warm for 5 mins. Serve the warm tortillas with the beef mixture, bowls of yogurt, lime wedges and fresh coriander and allow guests to wrap their fajitas themselves.
