Oven cook: Before cook: Preheat oven to 180°C gas mark 4, fan 160°C. Remove joint from packaging. Season joint with salt and pepper (optional). Allow joint to come up to room temperature for approximately 30 minutes. Preheat frying pan to a high heat.
During cook: Add 2 tbsp. of oil to frying pan. Add the joint & seal on all sides for 3-4 minutes to lock in the juices. Place joint in an oven proof dish and cover with foil and cook for:
Rare: 6 minutes per 100g.
Medium: 7-8 minutes per 100g.
Well done: 9 minutes per 100g.
After cook: Remove joint from oven and allow to rest for 20 minutes before serving. Remove string against the grain.
