Oven cook: 180°C; Fan 160°C; Gas 4; 30 mins per 500g plus 30 mins.
Remove packaging from lamb joint and allow to come up to room temperature for approx. 15 minutes. Preheat oven. Season with salt and pepper (optional). Place in an ovenproof dish and place on the middle shelf of oven. Cook for 30 minutes per 500g plus 30 minutes. For tenderness allow the joint to rest before carving for at least 5 minutes.
