Oven cook: Ensure food is piping hot before serving.
180ºC; Fan 160ºC; Gas 4; 30 minutes per 500g plus 30 mins.
Oven Before cook: Remove joint from refrigerator and allow joint to come up to room temperature for approx. 15 minutes.
Remove all packaging. Season with salt and pepper (optional). During cook: Place joint in an oven proof dish and place on middle shelf of oven. Cook for 30 minutes per 500g plus 30 minutes. For tenderness allow the joint to rest before carving for at least 5 minutes.
