Fruit and Macadamia Tea Cake

A moist, nutty fruit cake that utilises two delicious products from Our Malawi Partnership.


Ingredients

  • 300ml boiling water
  • 3 x Revolver Morning Malawi tea bags
  • 55g Nutcellars raw macadamia nuts (crushed)
  • 300g mixed dried fruit
  • 2 x medium eggs
  • 100g light brown sugar
  • 240g self raising flour
  • 1 tsp mixed spice

Method

  1. Make up the tea and add to the dried fruit. Cover and leave to soak for at least 4 hours, or ideally overnight.
  2. Preheat the oven to 160C and line a cake tin with baking paper.
  3. Combine the mixed fruit, eggs, nuts and sugar in a mixing bowl.
  4. Add the flour and mixed spice, stirring slowly as you combine.
  5. Tip into the cake tin and place in the oven for 1 hour - 1 hour 15 mins, or until a skewer can be inserted into the centre of the cake and come out clean.
  6. Leave to cool in the tin for 10 minutes. Then remove from the tin and allow to cool completely on a wire rack before slicing and serving.
