Fruit and Macadamia Tea Cake

A moist, nutty fruit cake that utilises two delicious products from Our Malawi Partnership.
Ingredients
- 300ml boiling water
- 3 x Revolver Morning Malawi tea bags
- 55g Nutcellars raw macadamia nuts (crushed)
- 300g mixed dried fruit
- 2 x medium eggs
- 100g light brown sugar
- 240g self raising flour
- 1 tsp mixed spice
Method
- Make up the tea and add to the dried fruit. Cover and leave to soak for at least 4 hours, or ideally overnight.
- Preheat the oven to 160C and line a cake tin with baking paper.
- Combine the mixed fruit, eggs, nuts and sugar in a mixing bowl.
- Add the flour and mixed spice, stirring slowly as you combine.
- Tip into the cake tin and place in the oven for 1 hour - 1 hour 15 mins, or until a skewer can be inserted into the centre of the cake and come out clean.
- Leave to cool in the tin for 10 minutes. Then remove from the tin and allow to cool completely on a wire rack before slicing and serving.
