Donna’s Courgette Martini

Ingredients
- 1 courgette, coarsely grated
- 2 lemons, juiced
- 2 tbsp caster sugar
- 25ml vermouth
- 50ml gin
- Ice
- Mint to garnish
Method
1. Mix the courgette with the lemon juice and sugar. Leave it for an hour – this makes a courgette syrup.
2. In the meantime, place a martini glass in the fridge to chill.
3. After an hour, strain the courgette syrup through a sieve into a jug.
4. Fill a cocktail shaker with ice, then pour 25ml of the courgette syrup.
5. Add the vermouth and gin.
6. Stir gently and strain the cocktail into your chilled glass.
