Beef Nachos

Ingredients

  • 200g pack lightly salted Tortilla Chips
  • 500g Co-op British 5% Beef Mince
  • 400g tin chopped tomatoes
  • 1 tbsp sunflower oil
  • 1 tbsp tomato puree
  • 1 tsp chilli powder
  • 2 red peppers, deseeded and sliced
  • Reduced fat-soured cream
  • Jar of salsa
  • 3 sliced jalapenos
  • 200g Co-op grated cheese

Method

  1. Pre-heat the oven to 200C/180C Fan/Gas 6.
  2. Heat the oil in a large pan and stir in the mince.
  3. Cook for 5 minutes over a medium heat, stirring all the time, until the mince is browned.
  4. Stir in the peppers, chopped tomatoes, tomato purée and the chilli powder and heat until simmering. Cook out for 4-5 minutes.
  5. Layer the tortilla chips, mince and jalapeños on a baking tray or in a large ovenproof dish and sprinkle over the cheese.
  6. Bake in the oven for 8-10 minutes until the cheese is melted and bubbling.
  7. Serve the nachos with salsa and soured cream.
