Beef Nachos

Ingredients
- 200g pack lightly salted Tortilla Chips
- 500g Co-op British 5% Beef Mince
- 400g tin chopped tomatoes
- 1 tbsp sunflower oil
- 1 tbsp tomato puree
- 1 tsp chilli powder
- 2 red peppers, deseeded and sliced
- Reduced fat-soured cream
- Jar of salsa
- 3 sliced jalapenos
- 200g Co-op grated cheese
Method
- Pre-heat the oven to 200C/180C Fan/Gas 6.
- Heat the oil in a large pan and stir in the mince.
- Cook for 5 minutes over a medium heat, stirring all the time, until the mince is browned.
- Stir in the peppers, chopped tomatoes, tomato purée and the chilli powder and heat until simmering. Cook out for 4-5 minutes.
- Layer the tortilla chips, mince and jalapeños on a baking tray or in a large ovenproof dish and sprinkle over the cheese.
- Bake in the oven for 8-10 minutes until the cheese is melted and bubbling.
- Serve the nachos with salsa and soured cream.
