Classic Chicken Cacciatore

Using simple ingredients, our chicken cacciatore recipe is quick and easy to prepare but results in a hearty, flavourful dinner. Enhance the sauce with mushrooms or olives to suit your taste.



Ingredients

  • 4 chicken breasts
  • 2 onions, finely sliced
  • olive oil
  • can chopped tomatoes
  • 4 sprigs rosemary, leaves removed and finely chopped
  • 3 cloves garlic, peeled and chopped
  • 1 red pepper, finely sliced
  • salt and pepper

Method

  1. In a deep pan or casserole dish, heat a large glug of olive oil. Add the onion, red pepper and garlic and sweat until soft.
  2. Pour in the chopped tomatoes, along with the rosemary, and add salt and pepper. Simmer for 15 minutes to reduce.
  3. In a separate pan, heat 3 tbsp of olive oil and add the chicken breasts, to give them a golden colour.
  4. When the chicken is browned, add each breast to the casserole pot, and bury them in the sauce.
  5. Heat the oven to 180C/160Cfan/gas 4, and cook for 35-50 minutes until the chicken is cooked through.
  6. Serve with fresh pasta, rice or mashed potato.
