Classic Chicken Cacciatore

Using simple ingredients, our chicken cacciatore recipe is quick and easy to prepare but results in a hearty, flavourful dinner. Enhance the sauce with mushrooms or olives to suit your taste.
Ingredients
- 4 chicken breasts
- 2 onions, finely sliced
- olive oil
- can chopped tomatoes
- 4 sprigs rosemary, leaves removed and finely chopped
- 3 cloves garlic, peeled and chopped
- 1 red pepper, finely sliced
- salt and pepper
Method
- In a deep pan or casserole dish, heat a large glug of olive oil. Add the onion, red pepper and garlic and sweat until soft.
- Pour in the chopped tomatoes, along with the rosemary, and add salt and pepper. Simmer for 15 minutes to reduce.
- In a separate pan, heat 3 tbsp of olive oil and add the chicken breasts, to give them a golden colour.
- When the chicken is browned, add each breast to the casserole pot, and bury them in the sauce.
- Heat the oven to 180C/160Cfan/gas 4, and cook for 35-50 minutes until the chicken is cooked through.
- Serve with fresh pasta, rice or mashed potato.
