Healthy Chicken Balti

Shake dinner times up with this rich, hearty and flavoursome chicken balti dish – perfect for the family.
Ingredients
- 500g Co-operative Chicken Breasts
- 1 x Co-operative Onion
- 2 x Co-operative Garlic Cloves
- 1 x Tsp Co-operative Olive Oil
- 1 x Tsp Schwartz Garam Masala
- 1 x Tsp Schwartz Fenugreek
- 200ml Co-operative Low Fat Crème Fraîche
- 200g Co-operative Cherry Tomatoes
- 1 x Co-operative Fresh Bay Leaf
- 200g Co-operative Basmati Rice
- 1 x Oxo Chicken Stock Cube
- 1 x Handful Co-operative Fresh Mint
- 1 x Handful Co-operative Fresh Coriander
- 1 x Tbsp Schwartz Curry Powder
Method
- Peel and chop the onion and garlic into small pieces.
- Heat the olive oil in a large frying pan over a medium-to-high temperature on the hob.
- Once this has heated up, add the onion and garlic and fry for 5 minutes.
- Chop the chicken breast into chunks, adding them to the frying pan.
- Sprinkle in the garam masala and fenugreek and fry over a medium heat for 5 minutes, stirring continuously.
- Pour the crème fraîche and cherry tomatoes into the pan, topping with the bay leaf.
- Crumble the stock cube into the pan and stir well.
- After a few minutes, add 100ml of boiling water and stir well.
- Leave pan to simmer over a low heat for 25 minutes.
- Combine the curry powder and 50ml of boiling water, stirring into a paste.
- Roughly chop the coriander and mint.
- Add the basmati rice to a pan of boiling water and simmer on a low heat for 12 minutes.
- Once the mixture in the frying pan appears thick, add the curry paste, bayleaf, basil and coriander and stir well.
- Drain the rice.
