Lamb and Spring Onion Stir Fry

Ingredients
- 1 clove Co-operative garlic
- 150 g meat and fish Co-operative lamb leg steaks
- 150g (5.5oz) Co-operative lamb leg steaks
- 100 g fruit and veg Co-operative mushrooms 100g
- (3.5oz) 1 Co-operative red pepper
- 1 Co-operative green pepper
- 15 ml groceries soy sauce
- 15ml (1tbsp) soy sauce
- dry sherry 30ml
- cornflour
- Co-operative sunflower
- 4 Co-operative spring onions
Method
- Crush the garlic.
- Slice the lamb and remove excess fat.
- Next slice the mushrooms and peppers.
- Mix the soy sauce, sherry and cornflour to a smooth paste.
- Add the garlic and lamb. Stir to coat.
- In a wok, or frying pan, heat the oil until sizzling.
- Add lamb and marinade. Stir-fry for a few minutes.
- Add the mushrooms and peppers. Continue to cook, stirring, until beginning to soften.
- Slice the spring onions diagonally and add half of them. Serve, garnished with the remaining spring onions.
