Masala Lamb Chops with Jeweled Salad

British lamb chops. Meat from the lambs' loin. High fat content making it a juicy and tender cut. Quick and easy to cook, can be served with a variety of sauces and accompaniments.
Ingredients
- 1 tbsp rapeseed oil
- 2 tbsp curry paste
- 4 lamb chops
- half a cucumber, finely diced
- 12 radishes, sliced
- 12 cherry tomatoes, quartered
- 1 red onion, finely sliced
- large handful mint, roughly chopped (save some for garnish)
- large handful coriander, roughly chopped (save some for garnish)
- 1 tsp ground cumin
- juice of 1 lemon
Method
- Pre heat the grill. Rub the chops in the oil and curry paste, and season with salt and pepper.
- Grill the chops for about 4 minutes each side (for medium), and allow to rest.
- Whilst resting, put the fresh ingredients into a bowl and give everything a good mix up. Season the salad, and plate up.
- Serve with the chops on top of the salad, and a sprinkle of fresh herbs to finish.
