Potato Salad

Put the finishing touches to your summer barbecue with this classic side dish.
Ingredients
- 500g Co-op new potatoes
- 2x Co-op fresh garlic cloves
- 4x Co-op fresh salad onions (scallions)
- Handful Co-op fresh parsley
- Handful Co-op fresh chives
- 100g mayonnaise
Method
1. Wash and slice the potatoes into desired size.
2. Bring a pot of water up to boiling point on the hob.
3. Once the water has begun to boil, add the potatoes and leave for 15 minutes.
4. Peel and finely chop the garlic and salad onions and add to a large mixing bowl.
5. Wash and chop the chives and parsley and add to the mixing bowl with the mayonnaise, stirring well.
6. Once the potatoes have been boiling for 15 mins, remove from the hob and leave to cool.
7. Once cooled, add the potatoes to the mixing bowl and stir until coated in the mixture.
8. Serve and enjoy!
