Jamaican Jerk Marinade

The essential marinade for a taste of the Caribbean. Perfect to use on meat, fish and veg!


Ingredients

  • 1/2 medium onion (coarsely chopped)
  • 4 medium scallion green onions (chopped)
  • 2-3 tablespoons fresh thyme
  • 1 1/2 tablespoons fresh ginger (chopped)
  • 8 garlic cloves (chopped)
  • 1 tablespoon allspice (coarsely ground)
  • 1 tablespoon white pepper (coarsely ground)
  • 1/2 tablespoon freshly grated nutmeg
  • 2 tablespoons dark brown sugar
  • 2 tablespoons honey
  • 2 tablespoons Maggi sauce or soy sauce
  • 1 tablespoon bouillon powder
  • 1 cup fresh mango and/or pineapple (optional)
  • 1 or more Scotch Bonnet Pepper (to taste)

Method

In a food processor combine all the ingredients. Adjust to taste and heat level with more or less spice. Refrigerate and use when ready. Use this marinade to flavour thin cuts of steak, pork, chicken, and a whole host of seafood items. Vegetables can also benefit from this tasty marinade. Turn this dish into a sauce by simmering over a flame to thicken. Pease do not try to make a sauce out of USED marinade.
