Roast Potatoes

Ingredients
- 1.7kg potatoes, peeled
- 3 tbsp olive oil
Method
- Preheat the oven to 190°C/fan 180°C/Gas 5.
- Cut each potato into 4 similar sized pieces so they cook evenly.
- Put the potatoes in a pan, add boiling water and boil for 5 minutes. Drain and shake the pan to roughen up the edges.
- Heat the oil in a roasting pan on the hob, add the potatoes, then put straight into the oven. Turn after 25 minutes, then cook for 15-20 minutes more.
